Gluten Free – Simple Sponge Cake

Gluten Free – Healthier-for-you Simple Sponge Cake! You can’t more classic than this – it’s a recipe that never fails!

  • 1 Cup Healtheries Gluten Free Baking Mix
  • ¼ cup Corn Flour Gluten Free
  • ½ teaspoon Baking Powder Gluten Free
  • ½ cup Sugar
  • 5 Eggs


  1. Heat your oven to 180 degrees
  2. Line a square baking tin with baking paper
  3. Sift the dry ingredients together and set aside
  4. Place eggs in a generous size bowl (yolks and whites), beat with an electric beater until white and fluffy. This process will take around 6-8 minutes
  5. Once white and fluffy add the sugar 1 tablespoon at a time and continue to beat until sugar has dissolved. Continue until all sugar is combined with the eggs
  6. Fold the dry ingredients into the egg mixture, making sure all has combined well, this will take a few minutes.
  7. Pour cake mixture into the square tin and tap a few times to get rid of any air bubbles
  8. Place in oven and bake for 40-50 minutes
  9. Check cake at 40 minutes and insert a knife or a toothpick in the middle to check
  10. If cake batter is still sticking bake till it reached 50 minutes
  11. Once cooked take out over the oven and let it cool. Once cooled turn onto a baking rack and cover

Slice and use as a base for tiramisu or trifle Slice in the middle and fill with cream and jam. Dust with icing sugar (optional)
